Zuppa Rapida - Italian quick-cook soup mix. This traditional Italian soup mix includes a variety of premium quality beans, lentils, farro (spelt) and pearl barley to make a nutritious hearty soup, produced by the Bartolini family, artisan producers, who have been farming in Umbria for six generations.
No need to soak, simply add to the stock or soup base of your choice and boil. The mix will be ready and tender to eat in just 30 minutes.
Suggested Recipe
400g Zuppa Rapida
100g mince meat
diced tomatoes
Bartolini Extra Virgin Olive Oil
1 onion
1 celery
1 carrot
beef stock
salt and pepper
Method:
Boil the quick cooking soup mix in salted water for 20 minutes. Finely chop the onion, celery and carrot, fry in oil. Add the mince meat, salt and pepper to taste and cook for 15 minutes. Add to tomatoes and cook for another 10 minutes. Drain the legumes and add the fried vegetables, and stock and warm through
